Olof Viktors is much more than a prized bakery and café. It´s a culinary destination beyond the public roads. A four-length farm between the fields in Österlen, filled with craft tradition and innovative creativity. The craftmanship is the golden-brown baked thread that runs through the entire company. We have a legacy to maintain. And not only because we are located on an old farm from 1890 or that we have been listed as the country´s best café. Ever since we transformed the farm in Glemminge into a bakery, patisserie and café in 2002, our proud bakers and skilled confectioners have made the dream come true of producing exceptional pastries and bread all year round, baked with craftmanship traditions and with love as big as the massive oven in our bakery. And it is our job to feed that love as often as we feed our sourdoughs, so that it continues to rise bigger every day.
We bake everything by hand in our bakery and always from scratch. Some people probably think we are a little old-fashioned out here among the fields who insist on burning our stone furnace with wood. But it´s really a matter of taste. The craftmanship traditions is in the walls as well as in our hands, and you can feel it in the taste. We make everything from scratch, without semi-finished products or ready-made flour mixes as it was done in the past. Of course, it takes longer, but we know that the slow fermentation process of sourdough contributes to both healthier and tastier bread.
